Ingredients:

1 cup all-purpose flour

1 cup corn flour

1 cup cornmeal

1/2 cup smooth peanut butter

1 cup water

1/3 cup vegetable oil

1 egg

Directions:

Preheat oven to 375F.  Whisk together the flour, corn flour, and cornmeal in a mixing bowl. Lightly grease two baking sheets. Place the peanut butter in a microwave safe dish, and cook in the microwave a few seconds at a time until the peanut butter has liquefied. Stir the peanut butter, water, vegetable oil, and egg into the flour mixture until a stiff dough forms. Roll out on a floured surface and cut into treat shapes with a cookie cutter. Place treats onto prepared cookie sheets.  Bake 10 – 12 minutes.  Allow the treats to cool on the baking sheets for 5 minutes before removing to a wire rack to cool completely. Store in an   airtight container.

Sandy’s Peanut Butter Carrot Cake

Ingredients:

1 cup flour

1 tsp. baking powder

1/4 cup peanut butter

1/4 cup vegetable oil

1 cup shredded carrots

1 tsp. vanilla

1/3 cup honey

1 egg

Directions:

Preheat oven to 350F.  In a large mixing bowl, blend flour and baking powder.  In a separate bowl, mix egg, oil, carrots, honey and peanut butter.  Add wet ingredients to dry ingredients and mix well until batter forms.  Pour batter into greased 8 inch round cake pan.  Bake for 30 minutes.  Let cool.  Puree cottage cheese in blender for icing.  Melt peanut butter chips and use to decorate.

Timmy’s Tasty Chihuahua Stew

Ingredients:

1/2 lb. of fresh tuna

1/2 cup rice

1 small potato, peeled

1/2 carrot

1 cup water

Directions:

Cut tuna into bite size pieces.  Slice potato and carrot.  Put all into a pot.  Add 1/2 cup water .  Put stove on high and bring to a boil.  Cook rice separately.  While cooking rice, add a little of the rice water to the stew.  Once rice is cooked, add to pot and stir.  Boil for 2 more minutes.  Remove from heat.  Strain juice into separate pot.  Once completely cool, add a little of the strained juice for more moisture (optional).

Ingredients:

1 boneless, skinless salmon fillet

1 cup potato flakes

1 cup cooked carrots

1 cup nonfat or low-fat cottage cheese

Directions:

Broil salmon until cooked.  Cut into tiny pieces.  Cook carrots in a small amount of water until tender.  Mix chicken and carrots with potato flakes and cottage cheese.  You may want to add some broth from the fish or carrots if it seems too dry.  Serve.  Store leftovers in refrigerator.

Lily’s Banana Bites

Ingredients:

2 1/4 cups oat flour

1/2 cup nonfat powdered milk

1/3 cup ripe banana, mashed

1/4 cup canola oil

1 vegetable bouillon cube

1/2 cup hot water

1 tbsp. brown sugar (optional)

1 egg

Directions:

Preheat oven to 300F.  In a large mixing   bowl, combine flour and powdered milk.  Dissolve the vegetable bouillon cube in hot  water.  Add banana, oil, and bouillon water    to the flour mixture.  Mix until dough forms.  Knead for 2 minutes on a floured surface.  Roll to 1/4 inch thickness.  Use a 2 1/2 inch bone shaped cookie cutter (or any one you prefer).  Bake for 30 minutes on ungreased cookie pans.  Cool and serve.
