Ingredients:
1 cup canned pumpkin
1 3/4 cups rolled oats
1 1/2 cups all purpose flour
1 cup carob chips
3/4 cup shortening
1/4 cup sugar (optional)
1 egg, beaten
1/2 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. ground nutmeg
1/2 tsp. salt (optional)
Directions: Preheat oven to 400F. In large mixing bowl, combine flour, sugar (optional), baking soda, cinnamon, nutmeg and salt (optional). Add and mix in shortening until mixture is crumbly. Stir in egg, pumpkin, oats and carob chips. Drop teaspoonful of dough onto ungreased cookie sheet. Bake 15 minutes or until bottoms are browned (oven temperature vary). Cool completely and serve.
