3 boneless, skinless chicken breasts
1 cup potato flakes
1 cup cooked carrots
1 cup nonfat or low-fat cottage cheese
Directions: Boil chicken breasts in a small amount of water until done. Cut into tiny pieces. Cook carrots in a small amount of water until tender. Mix chicken and carrots with potato flakes and cottage cheese. You may want to add some broth from the meat or carrots if it seems too dry. Serve. Store leftovers in refrigerator.
